31 Days of Cupcakes Recipe – Day #3 Cupcake
Flourless Chocolate Cupcakes With Whipped Cream are great for anyone who is trying to cut out a bit of flour from their diet but don’t want to miss all the flavors of great cupcakes.
This cupcake recipe combines the love of cupcakes with the love of coffee. Espresso powder topping gives it just right touch of flavor to make it perfect.
You can make a great presentation with these gorgeous cupcakes and get rave reviews on flavor!
Recipe for the Cupcakes and Topping
Cupcakes
3/4 cup butter
1 1/2 cups chocolate chips
6 eggs, separated
1/2 cup sugar
a. Melt butter and chocolate in a metal bowl.
b. Set in a pan of simmering water on low heat.
c. Stir constantly until melted then remove from heat.
d. Wait a few minutes then stir in egg yolks.
e. In a separate bowl beat egg whites until they hold soft peaks.
f. Gradually add sugar and beat until mixture is stiff and glossy.
g. Whisk some of the whites mixture into the chocolate, then pour back into the whites while stirring gently.
h. Fill cupcake liners.
i. Bake at 275 for 25 minutes or until cakes look set and an inserted toothpick comes out mostly clean.
Topping
whipped cream
espresso powder
Top room temperature cupcakes just before serving with a dollop of whipped cream and a sprinkle of espresso powder.
