The best Christmas cookies are the ones I make because they are quick and easy and everyone loves them. People think that you have to take hours in the kitchen to make the best Christmas cookies and that simply is not true. The best Christmas cookies are the ones you made out of love. When you bake in love how can something not be the best? So when you set your heart to making the best Christmas cookies, just remember, keep it simple. The best does not always mean something takes the longest.

Recipe: No-Bake Cherry Crisps

Ingredients for No-Bake Christmas Cookies

1/4 cup butter, softened
1 cup powered sugar
1 cup peanut butter
1-1/3 cups crisp rice cereal
1/2 cup maraschino cherries, drained, dried, chopped
1/4 cup + 2 tbsp mini semi sweet chocolate chips
1/4 cup chopped pecans
1 to 2 cup shredded coconut

Instructions for No-Bake Christmas Cookies

1. Beat the butter, sugar and peanut butter in a large bowl with an electric mixer at med speed until light and fluffy.
2. Stir in cereal, cherries, chips and pecans; mix well.
3. Shape teaspoonfuls into 1″ balls.
4. Roll ball in coconut.
5. Place on baking sheet.
6. Refrigerate 1 hour until firm.
Store in refrigerator
