Ingredients for Cashew Chicken Recipe

  • 1 cup cashew halves, dry roasted
  • 1.5 lbs skinless, boneless chicken breast
  • 1 cup raw onions, chop in quarters and then pull apart
  • 2 cup brown rice
  • 1/4 cup corn starch
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/2 cup yogurt, plain
  • 1/2 cup bread crumbs

Instructions for Cashew Chicken Recipe

  1. PREHEAT oven to 350 degrees.
  2. Cut chicken breasts into 1″ pieces.
  3. In a medium bowl add yogurt and put in chicken and set aside.
  4. Break up onion long wise so you have the long crecent shaped slices
  5. In a skillet, cook the onions with pam or other light cooking spray.
  6. In a sauce pan, cook the rice.
  7. In a large Ziploc baggie add the bread crumbs and chicken.
  8. Set onions inside a casserole dish and chicken to the skillet to cook.
  9. Add cashews and cook with chicken until chicken is white on outside
  10. Add chicken and cashews to the casserole dish with onions
  11. Add the rice and chicken broth and mix together in casserole dish well.
  12. Bake for 30 minutes until chicken is throughly cooked.
